Cimadolmo è un comune agricolo della Marca trevigiana, situato sulla destra idrografica del fiume Piave, in un territorio pianeggiante e fertile che ha fatto dell'agricoltura di qualità la propria carta d'identità. È qui, insieme ad altri comuni vicini della zona, che si coltiva l'Asparago Bianco di Cimadolmo, prodotto a Indicazione Geografica Protetta dal 2001, coltivato su terreni sabbioso-limosi con il metodo tradizionale delle asparagiaie coperte da teli per mantenerne la caratteristica candidezza. Il paese si trova inoltre in un'area segnata dalla storia della Grande Guerra, con il Piave che rappresentò per mesi la linea del fronte tra gli eserciti in lotta. Cimadolmo non ha un centro storico monumentale da esibire, ma offre un'esperienza autentica di campagna trevigiana, tra filari di vite, coltivazioni di asparagi e un paesaggio agricolo curato con attenzione da generazioni di famiglie del territorio, lontano dai grandi flussi del turismo veneto.

A história de Cimadolmo

The Asparago Bianco di Cimadolmo IGP

Cimadolmo's signature product is undoubtedly its White Asparagus, which received European Protected Geographical Indication status in 2001 and is grown in an area that includes, besides Cimadolmo, the neighbouring municipalities of Breda di Piave, Fontanelle, Mareno di Piave, Maserada sul Piave, Oderzo, Ormelle, Ponte di Piave, San Polo di Piave, Santa Lucia di Piave and Vazzola. The elongated, fully white spears are obtained by growing the plant on ridged beds covered with sheets that block light, keeping the shoot free of chlorophyll, tender and delicately, slightly sweet in flavour. Its cultivation is documented as far back as the seventeenth century, notably in Giacomo Agostinetti's 1679 treatise Cento e dieci ricordi, evidence of a farming tradition with deep roots in the area.

Sandy soils on the right bank of the Piave

The quality of Cimadolmo's asparagus is also explained by the nature of the soil: it consists of sandy-silty, alluvial soils, permeable and well drained, formed by the historical deposits of the Piave river along its right bank. This soil characteristic, combined with the climate of the Treviso plain, makes the area particularly suited not only to asparagus cultivation but also to viticulture, with vineyards alternating with fields in an orderly, productive agricultural landscape. Cimadolmo's connection to the river is therefore not merely geographical, but directly shapes the quality of the products that come from this land.

The Piave and First World War memory

Like many municipalities on the right bank of the Piave, Cimadolmo also carries the marks of the First World War: after the retreat from Caporetto in the autumn of 1917, the Piave river became the front line between the Italian and Austro-Hungarian armies for a year, with heavy consequences for the civilian populations of the whole area, in many cases forced into evacuation amid destruction. This memory, shared with neighbouring municipalities, is part of the territory's historical identity and is still remembered today through local monuments and place names. It is an important chapter to know for anyone visiting this part of the Marca Trevigiana, complementing the lighter side linked to food and wine.

A country village, with no monuments to show off

It should be said clearly: Cimadolmo has no old town rich in monumental buildings, and it would be wrong to present it as an art destination. Its value lies elsewhere, in the concreteness of quality agriculture that has managed to turn a local product, white asparagus, into a proper consortium recognised at European level. Visitors to Cimadolmo find a well-tended farming landscape, farms open for direct sales especially during the spring harvest season, and an authentic atmosphere of Treviso countryside, ideal for combining a food-and-wine itinerary with a wider visit to the Piave area.

Vineyards and the wider Prosecco area

Alongside asparagus, the territory of Cimadolmo also hosts vineyards that fall within the wider Prosecco DOC production area, a designation covering a very large part of the Marca Trevigiana and not to be confused with the smaller hillside zone of Conegliano Valdobbiadene DOCG. Here the vine is grown on the plain, alongside the asparagus fields and other crops, in a diversified agricultural landscape typical of the right bank of the Piave. It is not an area geared towards high-end wine tourism, but it still offers a genuine setting for discovering how lowland farming and viticulture coexist in this part of the Treviso countryside.
