San Mauro di Saline è uno dei comuni più piccoli e più alti della Lessinia veronese, arroccato nella parte alta della valle che prende il nome dalla frazione di Saline, tra boschi di faggio, pascoli d'alta quota e malghe ancora attive. È un territorio di montagna vera, lontano dai grandi flussi turistici del Baldo o della Lessinia più frequentata, dove la vita si è storicamente organizzata attorno all'allevamento e alla produzione casearia.
